Healthy and Easy Energy Bar
With the holidays right around the corner, it can be challenging to keep up with all the added stress and maintain healthy eating. These fiber and protein-packed bars are super easy, healthy, and give you that much needed extra energy.
Coconut, Almond, and Cranberry Energy Bars
1 cup uncooked old fashioned oats
¾ cup hemp hearts
¾ cup dried cranberries
⅓ cup Almond Butter
⅓ cup local honey
⅓ cup flaked unsweetened coconut
⅓ cup chopped almonds
2 tablespoons flaxseed meal
1 tablespoon coconut oil, melted
¼ teaspoon salt
1 teaspoon vanilla extract
Preheat oven to 350 degrees
Place oats and hemp seeds into a baking dish and bake for 8 minutes. After cool, transfer the mix to a large bowl and mix the cranberries, almonds, coconut, and flaxseed meal.
Mix the almond butter, honey, coconut oil, salt, and vanilla in a small saucepan over medium to low heat. Bring to a boil. Cook for 1 to 2 minutes, constantly stirring until everything is smooth.
Pour the almond butter mixture over the oat mixture. Mix well and press the mixture into an 8" lightly greased square baking dish. Bake at 350 degrees for 12 minutes or till lightly browned.
Cool completely. Cut evenly into bars.
